Tonight…
my roommate and I are watching the Walking Dead and because we can’t help but feel the need to snack during the show, I made Roasted Chickpeas! Totally easy, just preheat your oven to 400 degees, strain and rinse a can (or two…or three :] ), pat dry with a papertowel, lightly coat in olive oil and bake for 25-35 minutes! Take out and cover in any seasonings you like! It’s a fantastic substitute for overly buttery, salty popcorn.
Also, I cut up a fruit plate and have a big bowl of unshelled, steamed edamame! :] Hurray for healthy snacks!
